Almond & Strawberry Salad

I rarely eat food at big pot lucks. The idea of unknown people cooking food in kitchens unfamiliar to me totally creeps me out. If I do eat, I pick things that would require little tasting and finger dipping like salads and layered dips. Something like meatloaf or chili made by someone I don’t know would never, ever enter my lips. I’ve got issues. I know.

Anyway, a stranger made this salad at a bridal shower I was at once and not only did I eat it, but I stalked her for the recipe. It’s crazy easy and really delicious. The sweetness of the strawberries, crunchiness of the nuts and garlic tang of the dressing is a magical combination. It’s great on its own or topped with chicken salad (I make a kick ass one.)

Almond & Strawberry Salad

Here’s what you need for the salad:

5oz container of lettuce greens

1 box strawberries, sliced

1/2 cup sliced almonds, toasted

.

For the dressing:

1/2 cup vegetable oil

1/4 cup red wine vinegar

6 tablespoons sugar

2 cloves garlic

1/2 teaspoon salt

1/2 teaspoon paprika

.

Puree dressing ingredients in blender and mix with the lettuce, strawberries and almonds.

I am the same way! I have a thing about eating food cooked by people I do not know. I ate over a friends house and she made an awesome meal! I normally do not eat what I did not see prepared (restaurants are always picked carefully). Anyway it was an outside picnic. I went inside as things were winding down to talk to the host and enjoy the company of the guest. I saw something made me sick. All the people that prepared the meal were licking and sucking their fingers!!!!!!!!!!! How sicking is that !!!!!!!!!!!!!!!! As careful as I was, I still got gross food!

By the way, the salad looks great!

The name of this post drew me in. I am not a food blogger either, but tend to write about food occasionally, take a couple of crappy photos and share. Ha! Salad sounds terrific by the way! Gonna try it!

That salad looks amazing and I am SO going to try it. I’m pretty careful about pot-luck eating too. If I know the makers and know that they are clean people, I’m okay with it but get fussier when it comes to strangers.

That salad does look delicious. I don’t eat food at potlucks either unless I know the person that made the food and how they live.

Not a fan of the buffet or potluck. If I partake I try to avoid anything that might lead down the salmonella road. Been there and don’t want to go back.

Mmmm, I make a similar one but it doesn’t call for garlic and paprika – I’m definitely throwing those in next time! Sounds like the perfect addition.

Totally get the whole potluck thing….whenever possible, I like to try and avoid food prepared by the cat lady (whose kitchen counters double as a litter box!!). You never know what kind of nasty mofos are out there pretending to be all prim and proper! Shit, remember that hoarder on Oprah years ago?! YIKES!

Back to the salad…
I do one like that, except use pecans and gorgonzola…and the vinaigrette is balsamic based! Balsamic/strawberries/gorgonzola….a heavenly combo! Gotta try it!
