Cannoli Chip And Dip

We were in an Italian market over the weekend and their cannoli machine had broken. Rather than trash all of the broken cannoli, they sold bags of the broken shells to be eaten like chips. Genius, right? I love, love, love cannoli, but have never made them at home. (Baking is so not my thing, but dip I can do.) It turns out the filling couldn’t be easier.

You need:

2 c. ricotta cheese (drain water)

1/2 c. confectioners’ sugar 1/4 tsp. vanilla extract

To make them:

Mix the ingredients in a food processor.

Hand mix in the chocolate chips.

That’s seriously it.

If you don’t happen to have an Italian market with a broken cannoli machine around the corner, Stacy’s Pita Chips come in cinnamon sugar and work perfectly with the ricotta dip.

I think it’s such a fun twist on dessert and it couldn’t be easier.

Plus, it’s just as good on a spoon.

Genius, right? I know.
