    Pasta Carbonara

4 strips bacon or pancetta cut into small pieces
    2 cloves garlic minced
    1 handful green onions, chopped
    1 handful fresh basil, chopped
    1/2 package spaghetti or linguine
    2 egg yolks
1 cup of the cooking water from the pasta
    1 cup frozen peas
    1/2 cup fresh parm cheese

    Cook
Spaghetti to al dente, drain and reserve a cup of the cooking water.
Saute bacon until it is just turning brown, add garlic, add peas. Add
basil and onions and cooked pasta and right away add tempered egg yolks.
Temper egg yolk by adding them to the hot cooking water and stirring
up. add parm and stir until blended. serve immediately.

I also like to add roasted tomatoes to this.

    @PhDMommy

Off the top of my head because I don't have the recipe with me:

1/2 -1 lb sausage or hamburger
    1 lb  penne
    1 jar tomato/spaghetti sauce
    8 oz cream cheese
    8 oz sour cream
    cheese to top

    Brown
meat then simmer in sauce for ~20 min.  Cook pasta as normal.  Mix
cream cheese and sour cream together.  When pasta is done add to meat
sauce.  Put a layer of meat/pasta in a baking dish and top with dollops
of cream cheese/sour cream mix and sprinkle with cheese. Repeat (layer
of pasta, sour cream, cheese)  Place in hot over (375ish) for ~25-30 min
    or until bubbly.

I generally serve this with a salad and
garlic bread and have gotten raves every single time I make it.  I think
there is just something about the cream cheese/sour cream mix that
makes it special.  I also often sneak in a few veggies in the sauce
(diced fresh tomatoes, zucchini, mushrooms, etc)

This is the recipe that got my daughter to like broccoli.

    Broccoli and bowties

    2 cups uncooked bowtie pasta
    2 tbsp unsalted butter
    2 garlic cloves, minced
    2 tbsp olive oil
1 head broccoli, cut into bite-size pieces
    pine nuts (optional)
    Parmesan cheese, grated (optional)
    Zest of 1 lemon
    Juice of 1 lemon
    Salt and pepper

    Bring
a large pot of water to a boil and add salt. Add broccoli and boil 3
minutes. Remove from water to a large bowl. Set aside. In same water,
boil pasta according to package directions. Drain and place in bowl with
    broccoli.

If using pine nuts, toast them in a dry skillet over medium heat, tossing frequently, about 5 min.

Zest and juice the lemon and dice the garlic.

    In
small skillet, heat olive oil and butter over medium heat. Add lemon
zest and garlic mixture and sauté about one minute. Off heat, add lemon
juice, salt and pepper to taste. Pour over pasta and broccoli mixture,
tossing well. Serve with toasted pine nuts, if using, and Parmesan
    cheese.

Then cheese. In a bowl scramble 6 or7 3ggs with a big splash of milk,
add salt pepper, garlic and a little cumin or chili powder, pour it over
the other stuff and bake at 350 degrees about 20 minutes or until done.

    @fatchickonabike crustless quiche

    4 eggs

1 ½ cups shredded cheese (I use old cheddar)

    ½ cup milk (I use 1%)

    ½ cup cream (I use half-and-half - 5%)

2-3 oz cooked ham, diced (in a pinch I’ve even used cut up cold cuts)

    One small onion

    Vegetable oil

    Unsalted butter

    About 3 tbsp bread crumbs

    Salt and pepper

Coat a glass pie dish with unsalted butter, then add bread crumbs and shake dish until evenly distributed over entire surface.

Place the diced ham in the bottom of the pie dish.

Dice the onion. Heat vegetable oil over medium heat and sauté onion until golden, about 3-4 minutes. Place over ham in pie dish.

Shred cheese and place over ham and onion in pie dish.

    Combine
eggs, milk, cream and pepper in bowl; beat with fork until evenly
mixed. Pour over mixture in pie dish. Bake at 425 degrees for 20 to 25
minutes. Serve with a green salad and fresh crusty bread.

    @Sammie

    Do you have a crockpot?

    3 ingredients:
    2-3 chicken breasts
1 can pineapple chunks (1-1/2 cups fresh)
    Hawaiian style or Teriyaki marinade/sauce

    Optional:
    Diced onion
    Thinly sliced green bell pepper
    Minced garlic & salt/pepper

    Throw
it ALL in together. I usually whisk the garlic, salt pepper into the
sauce then coat the vegetables then pour it over the chicken breasts.
Cook on low for 6-8 hours or high for 4 hours. (I prefer low. It seems
to taste best after slow cooking.) Serve over rice and you're done! I
usually top with some sliced green onions and serve with fruit and/or
    fresh green beans.

You can add so much variety here. Sometimes I
do homemade BBQ sauce, sometimes I throw in extra veggies I have on
hand, sometimes I shred the chicken and make Hawaiian wraps, or serve on
buns. Lots of possibilities! It's easy, cheap and delicious. My
favorite quick meal. You only use a crockpot and a pot for the rice, so
    easy cleanup too.

If you're wanting to serve with green brand or
another veggie. Make a foil packet, throw in the veggies and drizzle
with olive oil or a pat of butter then sprinkle on some salt &
pepper. Close it up and put it on the crockpot for the last hour. Then
your side dish is taken care of with no extra hassle and the veggies
steam perfectly in the crockpot. Easy, peasy.

    I make double
batches and do something different with it the next night. If we had it
over rice then I'll serve it on wheat rolls with homemade cole slaw or
handcut fries the next night. My husband HATES leftovers, but he doesn't
mind this at all. It's that good

    Preheat

    @Love

One night a week, we have breakfast for supper:
Momma's blend omelettes (eggs, diced ham, onions, cheese)
and breakfast potatoes (whole potatoes, diced medium, roasted in the oven)
    Simple, delicious, CHEAP

Taco night. I doubt you need a recipe for that LOL It's awesome, cheap, and tasty.

We have roast night (LOVE my crock pot).

    We're
having lasagna (homemade) Friday night, but honestly--for what I spent
on supplies for that meal, I could have bought a frozen one and saved
about $10 on that one meal

    Rice, beans, plantains and chicken.
    Chili
    (1.5
lbs of beef, 2 cans diced tomatoes, 2 cans drained kidney beans, one
can of black beans, 2 cloves garlic minced, 1 onion diced or shredded,
spice with paprika and cayenne pepper and salt to taste)

    gourmet
grilled cheese and soup night- grilled cheese with
turkey/ham/avocado/tomato whatever toppings you like, and either
    homemade or canned soup

    Kitchen sink pasta casserole- whatever
the hell you have in the fridge that's going to go bad, chopped up. Cook
1-2 boxes of penne/ziti/rigatoni, and throw in 1-2 jars of pasta sauce
(depends on how saucy you like your pasta, we use 2), mix your chopped
leftovers into the pasta and throw the whole thing into a baking pan.
Cover the whole thing with cheddar cheese and bake on 350 for 25
    minutes.

    Breakfast muffins:
    I use a dozen eggs
    Little bit of milk
    Cheddar cheese
    Bread
    Sausage or bacon
Cook bacon or sausage and have it ready on the side
I scramble the eggs with milk
I rip the bread up in small pieces and shove a couple into a greased muffin pan
I put the cheese and sausage or bacon in with the eggs
Pour in the eggs over the bread until about 3/4 of the way filled
Cook at 350 for 15-20 mins
I just a stick a toothpick in and if it comes out clean then they're done
Btw using the dozen eggs makes about 15 muffins or so.

Do you like chicken parm? I have a really simple casserole recipe if you do

    @Tattooed_SM

I found this recipe on Pinterest and it is now a family favorite at
our house. The second time I cooked it, I added garlic powder to the
chicken and the sauce. It made it even better. Will def do that for now
on. Great, now I want some for dinner tonight! lol

another one of our favorites is chicken and rice casserole.

    - 1 package of 3 chicken breasts (my mom always uses a whole hen but that is just too much work)
    - box of rice
    - 2 cans of cream of chicken soup
    - 1 or 2 cans of cream of mushroom soup (depending on how much rice you cook)
    - lots of cheese!

    Cook
your desired amount of rice (I always use a hole box of rice b/c I have
a pretty big casserole dish) and bake your chicken. When the chicken is
done, cut it up and put it in a casserole dish. Add the rice, soups and
some cheese and stir it all up until its thick (you don't want it to be
runny though, that would be ewie). Cover the top with more cheese. Bake
in the oven for about 10-15 minutes. I always turn the oven to broil
for the last few minutes so the cheese is brown. Aaaaaaaaaaand, your
done! It always makes enough for us to have for a left-overs night
(plus, it is always better the next day)

    quesadillas.
essentially a grilled cheese sandwich. if you want

    @SchweddyBalls
Just made this tonight. Not sure what its called, but got it from "Everyday Italian" soooooo I call its "Tits MahGee Pasta"
Boil up 1lb of pasta (your choice)
while pasta is cooking, in a seperate pan LARGE enoug to handle cooked pasta, start sauce....
    Sauce:
    1/4 cup olive oil
    1/2 cup italian bread crumbs

Heat oil till you see "heat ripples"
Add bread crumbs and stir till oil is fully incorporated.
Add 1-2 cups of pasta water and stir till smooth and creamy.
Add in cooked pasta, stir to fully coat and sprinkle with parm.

    (Obviously,
pasta should be done at THIS point and standing by, still in the
water......its one of those "work out the times to get it right"
recipes......you DONT want the oil and bread crumbs cooking AND waiting
    on the boiled pasta water.....blahblahblah)

    Now alone, this
tastes pretty damned good and is a super easy/cheap ass side
dish......HOWEVER......I add a lot of extras, that increases the
calories and fat content big time!!!!
    Tonight I added sliced and
diced salami, 2 tbls crushed garlic, 1 can small black olives, 1 bag
washed baby spinach, 1 small jar artichoke hearts, chopped, 1/2 cup
halved grape maters and some chopped up pepperchini rings.
    I added
the meat to the oil to heat it thru BEFORE adding the bread crumbs,
added the garlic at the same time as bread crumbs, then EVERYTHING else
with the pasta. Cooked on low till spinach was fully wilted. Sprinkle
    with parm and serve.

Should note......everything in my adulterated version was bought at the 99¢ store.....except the salami.

    I make a wicked curry glazed chicken that's crazy-simple.

Turn the oven on to 350F.
Put 1-2 tbsp butter in a 9x13 pan and put it in the oven to melt while it's preheating.
When it's melted, take the pan out and stir in 1-2tbsp mustard (dijon makes it way better but regular yellow is ok), 2-3tbsp honey, a heaping teaspoon of curry powder, salt to taste, and a couple of tablespoons of water.
Once it's all mixed together, add chicken pieces (whatever you like, I like breasts and wings best personally) and toss until well coated. It doesn't matter how much chicken you use, just so long as the pieces don't overlap in the pan too much. So like, a pound or two?
Bake for 20 minutes, then turn over the pieces and bake for another 20-40 minutes depending on what part of the chicken you're using.
Serve over rice (even better if you add some coconut oil to the rice while it's cooking) with some sort of steamed veggies.

    taco casserole

    1 lb ground beef

    1 packet taco seasoning

2 cups shredded cheese (Colby jack or fiesta or whatever you feel like)

1 large can diced or crushed tomatoes (i thinks it's 28oz)

2 cups of either tortilla chips, Doritos, taco shells.....

    1.5 cups lettuce (shredded)

    2 cups cooked rice

1 can of corn (drained) or 1 can of pinto beans (drained)--these are optional

brown the meat, drain, mix in taco seasoning and follow the directions. when the meat is done (and the rice should be cooked as well), use a large bowl and mix the meat, rice, 1 cup cheese, the can of tomatoes, 1 cup of chips and the beans and/or corn if you are using together. put in a casserole pan and put in the oven for 20 minutes at 375. take it out, top with lettuce, rest of the cheese and chips then put back in for 5 minutes.........then it's done.

we all like this because it's cheap, easy and you can add or subtract all kinds of stuff to it and it tastes yummy! plus, we usually have all of the ingredients around the house

I plan 2 weeks worth of menus at a time for my family of 6. Breakfast is almost always cereal or oatmeal. Sometimes eggs and toast. Lunches are generally pb&j, leftovers, or cold cut sandwiches. We have a deep freeze stocked with meat, so I only have to make a menu work with fresh produce and sides. Yes, there's a lot of pasta and potatoes....they're cheap. This was this 2 week period:

Philly steak sandwiches (used sliced cube steaks that we had in the freezer)

    Homemade pizza

    Taco night

Pork roast, mashed sweet potatoes, and brussel sprouts gratin

    Chicken pot pie and salad

Steak, baked potatoes, and steamed broccoli

Salmon patties, alfredo pasta, and peas

    Spaghetti, garlic bread, and salad

Chicken korma with rice and roasted cauliflower (LOVE Indian food)

Ham, steamed carrots, and sweet corn casserole

Chicken nuggets, mashed potatoes, and corn (Hubby was gone....I think I ate ice cream that night. hehehe)

Ham and pea casserole (ham, peas, noodles, and alfredo sauce) and salad

    Enchiladas and black beans

Pork roast, lima beans, and mac-n-cheese

Forgot to add that weekend lunches are sometimes bigger b/c everyone is home. Those meals are sometimes chili dogs with chips, grilled cheese and soup (was a rainy day), or sloppy joes.

    Adobo.
Couple pounds of chicken thighs or pork, I like the pork. Stew pork from the grocer
    1 cup vinegar
    1/2 cup soy sauce
    2 bay leaves
    1 tsp minced garlic
    Water to cover
    Veg oil

Put little bit oil in bottom of big pot, when warm add meat to brown.
Add soy and vinegar, garli and bays, add water to cover. Simmer till done.
    Eat with steamed rice.
    Fantastic the next day.
I will make sandwich with the meat, just bread, meat and mayo, my husband thinks I am nuts.

This is my husbands FAVORITE thing that i make

    Chicken Supreme

    4 boneless chicken breasts

    4 strips bacon

1 can dried beef (on the top shelf in the 'canned meat' aisle)

    1 can cream mushroom soup
1 can cream of chicken soup (optional..if you want more sauce)fresh mushrooms1 tbl. flour

    1 cup sour cream

Line bottom of crock pot with dried beef. Wrap chicken in bacon and leftover dried beef and place in pot. Mix sour cream, soup(s), flour, and shrooms and pour over chicken. Cook for 4-6 hours on low. That's it! I serve this with white rice and make sure to make enough for lunch the next day! SO GOOD

I pretty much make up all my food. I never follow a recipe. I made a
roast chicken dinner the other day and with thee leftovers from the
chicken. I made chicken and chorizo, bits of chorizo that needed used
up, mushrooms, onion, olives, a tin of chopped tomatoes, some tom puree
and seasoning. I did it with pasta.

    I made up veggie burgers
the other day too. Cause I got a tin of kidney beans for only 18p! I
mushed them up with some grated carrott, grated onion and finely chopped
broccoli. Added a tsp of curry powder and some corriander. Also
breadcrumbs and an egg and made into patties and fried in the tiiiniest
amout of oil. Went down a treat!!

My husband makes taco salad about once every other week or so. It's everybody's favorite meal.

    2 lb. ground turkey

    2 packets of taco seasoning

    1 head of lettuce

1 bag of shredded taco blend cheese

    1 can of black beans

2 diced tomatoes (sometimes we use canned)

    1 can of Mexi-corn

    1 bag of tortillia chips

1 1/2 bottles of thousand island

This makes a huge bowl. We always have leftovers. It's just as good cold for breakfast the next day.

    Cook
the mean, season in and put it all together. I layer it like this:
chips, crushed up. Then lettuce, meat, then cheese so it melts, beans,
tomatoes, corn, then the dressing and mix it all up.

    @breezy

I threw it all in the crock pot out of memory and thought I was jazzing it up by throwing in some diced red onion, bell pepper, garlic, and s&p. lmao.

    Optional:

    Diced onion
    Thinly sliced green bell pepper
    Minced garlic & salt/pepper

    @CoffeeQueen

chili with sweet corn bread...very easy and delish

    Chili
1 large can tomato juice or V8
    2 cans kidney beans
    1 can diced tomatoes
    1 can tomato sauce
    1 can tomato paste
    Chili seasoning
1 lb turkey or beef optional

    Brown
meat and drain. Mix together with all of the above and simmer. I will
occasionally add other things, you can add corn, onions, sub salsa if
you don't have diced tomatoes, etc. Make it your own!  Heat through and
top with shredded cheddar cheese and sour cream. Yum!

    Sweet corn bread
1 box jiffy corn bread mix
    1 can cream style corn.
optional - I add sugar to sweeten, I don't usually measure, but I'd say a coffee scoop's worth

Mix together. I pour in mini bunt pan and bake, but you can also do muffins or corn bread. any which way, it's tasty!

Bake and serve. Goes well with the chili, serve with butter or not. My family devours this stuff lol

    EASY chicken and noodles

    1 rotisserie chicken
egg noodles, amish noodles, home made noodles, your choice
    chicken broth
    cream of mushroom soup
    optional - onion, celery, mushrooms

    Pull
apart rotisserie chicken, set aside. Heat broth to boiling, add
noodles. Cook til al dente. Add in everything else, season as you like
with salt and pepper. Let simmer. Stir occasionally to make sure the
creamed soup mixes thoroughly, it will thicken the broth. Serve with
    mashed potatoes, biscuits, whatever. =)

    Breakfast bowl

    Bob Evans sausage
    eggs
    diced potatoes (potatoes o'brien)
    shredded cheddar cheese

Bake potatoes in oven as directed on package (you can also use hashbrown potatoes, for that you will fry on stove top)

    Brown
sausage, making sure in the end it's in little crumbles. sprinkle flour
and mix into sausage. Add milk, stir. As it cooks, this becomes sausage
gravy. Reduce heat, adding more milk if it becomes too thick.

    Then
take your eggs, mix with milk and pour in pan on low to medium low. Do
not cook too fast! The eggs will become your 'bowl" or bottom layer. I
use a small pan and do each person's separate. When done, you put the
egg on the plate, then potatoes o'brien or hash browns, top with sausage
and grave, and cheddar cheese. It is ridiculously good!
