    I am making lasagna but I have no ricotta or cottage cheese or sour cream lol. Can I just layer some cheese down? I have marble and parmesan. If I do just put the cheese down I don't need any egg right? Sorry I usually make it with ricotta but forgot it :( I also have slices of swiss...

    It won't taste the same w/o the ricotta.  but you can make homemade ricotta VERY easily!  and pretty fast...

    you can use 1%, if I'm planning to make it, I use whole milk, but I have used 2% before.  As for the cheese cloth, you by any chance have any old fashioned diapers?  The flat ones, not the pre-folded, they make a great cheese cloth sub, if you don't have those, a strainer and cheap paper towels work too.

    i just use bechemel (sp?) sauce! flour and butter in a pan then add milk til its the desired consistency. add a little salt pepper and grated cheese to taste :)

    O.K., here are two...but they both have stuff you may not have on hand...

    #1  3 1/2 quarts milk (whole preferred)
          2 cups 1/2 n 1/2
          1/3 cup distilled white vinegar
          4 oz unflavored goat cheese (optional)

    Whisk milk, 1/2 n 1/2, and vinegar.  Insert a candy thermometer so it doesn't touch the bottom of the pan and over low hear bring to 170 degrees, stirring occasionally to prevent scorching/sticking.

    Line a colander or strainer with damp cheesecloth and place over a large bowl.

    As the milk mix approaches 170, it will begin to separate into solid curds and liquid.  Scoop out the curds with a slotted spoon and put into the strainer.  Allow the curds to drain at room temp for 1 hour, if you're using the goat cheese blend it in now.  Transfer to a one quart container and refrigerate.  Should last about 3 days...

    #2  2 quarts milk
          1 quart buttermilk or sour cream

    Bring to a boil, reduce heat and simmer until curds separate about 2-5 minutes.  complete as in #1 above.

    You can make "buttermilk" with lemon juice as a substitute if you don't have any...just google "buttermilk substitute"

    you can also google homemade mozzarella...I haven't tried it yet, but it looks like fun to make, especially if you let the kiddos in the kitchen, you have to "pull" it like taffy.

    Ok so I didn't have the ingredients to make ricotta :( but I am familiar with the sauce @Irishlass recommended so I tried that. I added marble and parmesan to it and the after it's layer I sparkled a bit more cheese on top. Its in the oven now getting all gooey mmmmm
