Potato Leek Soup

Ingredients: 4 large leeks, 3 c garlic cloves, 2 lbs potatoes, 7 c chicken broth, 1 tsp salt, 1 c heavy cream, 3 tbsp unsalted butter

Directions: Cook leeks, garlic, and butter in saucepan for 10 minutes. Add potatoes, broth, and salt to the pot; let boil until potatoes are soft. Puree mixture using hand-held blender, adding heavy cream. Let soup come to a boil, then serve.

Baked Potato Wedges

Ingredients: 4 potatoes, 1/4 c olive oil, 1 tsp onion powder, 1 tsp garlic powder, 1 tsp paprika, 2 tsp salt, 1/2 tsp pepper, 1/3 grated parmesan cheese, 2 tbsp fresh parsley, cooking spray

Directions: Preheat oven to 400 degrees. Put olive oil, onion/garlic powder, paprika, salt, pepper, and parmesan cheese in a resealable bag and shake bag to mix the seasonings. Add potatoes (wedged) and shake again. Place potatoes on baking sheet, bake for 35 minutes, then serve.

Potato Rosti

Ingredients: 2 lb potatoes, 3/4 tsp salt, 1/2 tsp black pepper, 1 tbsp butter, chives

Directions: Put butter in a pan on low heat. Grate the potatoes, placing them in a frying pan. Fry for about 20 minutes. When golden, remove from pan, garnish with chives, then serve.

Cheesy Scalloped Potatoes

Ingredients: 3 tbsp butter, 3 garlic cloves, 3 tbsp flour, 2 c heavy cream, 1 c chicken broth, 2 lb potatoes, 2 c shredded cheddar, 1/4 c chopped chives, 1 tsp salt, 1 tsp pepper

Directions: Mix garlic and butter in saucepan for one minute. Add flour, cream, chicken broth, salt, and pepper — stir until thick. Peel and thinly slice each potato. Layer the potatoes and cheese sauce into a casserole pan, bake at 400 degrees for an hour and let cool. Then serve.

German Style Potato Salad

Ingredients: 3 c diced potatoes, 4 slices bacon, 1 onion, 1/4 c white vinegar, 2 tbsp water, 1 tsp salt, 1/8 tsp pepper, 1 tbsp chopped parsley

Directions: Boil potatoes until semi-soft, and fry the bacon until crisp. Cook onions in the bacon grease until brown, and add vinegar, water, salt, and pepper. Mix in the potatoes and bacon, heat until warm, then serve.

Roasted Potatoes

Ingredients: 3 lb potatoes, 1/4 c olive oil, 1 tsp salt, 1 tsp pepper, 2 tbsp minced garlic, 2 tbsp minced parsley

Directions: Preheat oven to 400 degrees. Slice potatoes into quarters and mix into a bowl of olive oil, salt, pepper, and garlic. Mix until evenly coated and spread onto a pan. Pop in oven for 45 minutes, garnish with parsley, then serve.

Ingredients: 2 large potatoes, 1 large opinion, 2 eggs, 1/2 c flour, 2 tsp salt, 1 tsp baking powder, 1/2 tsp pepper, oil

Directions: Use a food processor or grater to grind potatoes and onion. Place on a dish towel and squeeze out as much liquid as you can. Mix with eggs, flour, salt, baking powder, pepper, and flour until even. Drop several spoonfuls of the mix into frying pan and flatten with a spatula. Once golden, serve.

Potato & Beef Casserole

Ingredients: 4 c thinly sliced potatoes, 2 tbsp butter, 1 lb ground beef, 1 can condensed cream of mushroom soup, 1/3 c whole milk, 1/2 tsp salt, 1/4 tsp garlic powder, 1/8 tsp pepper, 1 tbsp chopped onion, 1 c shredded cheddar cheese

Directions: Mix peeled and boiled potatoes with butter and salt and use to line baking dish. Bake at 400 degrees for 25 minutes. Cook beef in a skillet and add on top of the potatoes. Mix soup, milk, garlic powder, pepper, onion, and cheese in a heated saucepan. Pour the cheesy mixture over beef and potatoes, bake for an additional 20 minutes.

Ingredients: 4 large potatoes, 1 yellow onion, 1 egg (beaten), 1 tsp salt, 2 tbsp all-purpose flour, 1 c vegetable oil, pepper to taste

Directions: Grate the potatoes and onion and absorb any excess liquid. Add egg, salt, pepper, and flour to the potatoes and onion. Mix evenly and place it into the skillet to fry until brown, then serve. Can top with mushroom gravy, sour cream, or applesauce.

Potato Breakfast Pie

Ingredients: 1 tsp salt, 8 eggs, 1/2 c milk, 9 oz Italian sausage pre-cooked, 20 oz hash browns cubed and thawed, 7 oz shredded cheddar cheese

Directions: Mix eggs, milk, sausage, hash browns, salt, pepper, and cheese into a bowl. After it’s blended evenly, pour into a greased pan and bake for 30 minutes. Take it out, add more cheese, bake for another 5 minutes, then serve.

Ingredients: 4 tbsp Yukon gold potatoes, 1 tsp olive oil, 1 tsp ground black pepper, 1 tsp garlic powder, 1 c shredded cheddar-jack, 8 slices cooked bacon, tomatoes, jalapenos papers, onions and guacamole

Directions: Slice potatoes in half and stir them in a bowl of olive oil, pepper, and garlic powder. Put them in the oven for 20 minutes at 425 degrees. Flip the potatoes and put them back in the oven for another 10. Take them out and sprinkle with salt, bacon, and shredded cheese. Top with chopped onions, jalapenos, salsa, sour cream, and guacamole. Serve.
