Birthdays are huge in our house. I love to make each child’s birthday special by surprising them that morning by decorating the kitchen with balloons and streamers and making a yummy breakfast. And what could be better than birthday cake pancakes with sprinkles on your birthday? I can’t think of much.
The kids absolutely flipped over these pancakes and I found myself snacking on them throughout the morning since they make a ton. I am planning on freezing the rest (if they make it through the day) and pulling them out for a fun treat.
Birthday Cake Pancakes
1 box of Yellow cake mix (along with ingredients to make cake: eggs, water and vegetable oil)
1/2 cup colored sprinkles
1 cup of powdered sugar
1-2 tablespoons of milk
Slowly add milk to powdered sugar until desired consistency is reached
Mix 1 box of yellow cake mix according to directions on box
Add 1/4 cup sprinkles and mix gently
Add 1/4 cup of batter to a hot skillet until bubbles form on surface (like making… pancakes)
Flip once and cook until second side is golden brown
Top with sugar glaze and serve sprinkled with colored sprinkles
